PRIORY MARKET

It’s been 9 months since Priory Market opened its doors, and what a whirlwind it has been! In June 2025 Tallaght was lucky to have the city’s first indoor food and drinks market, and we got in on the ground floor, literally and figuratively. The venue has a brewery on site with their own tank bar, a coffee roastery, wine bar and 12 food vendors. As the only pizza proprietor we have been flinging dough and flying high. The venue is great and has grown into exactly what the Priory team had envisaged; a real community hub. 

Open 7 days a week, locals now know that they can always come to Priory and get a great cup of coffee, a place to chat and an epic pizza, of course! It wasn’t all plain sailing, however. After the initial buzz of launching the venue, there were a few weeks of madness where every person in a 5 mile radius was in the doors, vendors were flat out and it was difficult to keep up. Great problems to have, says you, but also something we needed to get a hold of as soon as possible so service didn’t drop and we didn’t lose customers. We hired extra staff, pulled long shifts making extra batches of dough and figuring out logistics. Then a few weeks after that, tumbleweeds… the place quietened down, and once everyone and their mams had visited, we worried if this was going to be the norm. Was it all just a fad? That’s when shit gets real and you find out whether the venue will really work in the long term. 

Thankfully, the team at the Priory had accounted for this, and duly launched into their events plan. With regular events now scheduled to keep the place hopping, you can do everything from line dancing, quiz nights, craft experiences, brewery tours, family film screenings and a whole host of mad stuff to keep the whole family occupied. 

It has especially become a great family destination so if you have kids and are looking for a place where you can keep them entertained, everybody can eat what they want and you can get a 99 after, then rally the troops and hit The Priory Market this weekend. We’ll be there.
